Type of cheese: hard.
Time of maturation: 4 to 5 months.
Semi-fatty cheese, low humidity, cooked mass, molded, pressed, salty and matured.
Brittle texture with thin and uniform grain.
Compact and consistent mass, smooth cut and uniform white-yellowish colour.
Sweet and slightly salty taste; characteristic smell well developed, clean, soft and nice.
Appearance: white-yellowish colour mass. Semi-fatty dough of low humidity, firm and consistent, with brittle fracture and shear.
Smell: it presents a lactic smell and slightly cooked, as well as a spicy nuance and a somewhat spiced note.
Taste: spicy and moderately salty, with toasted notes.
Forms of consumption
Cut: ideal to be part of an excellent cheese table. Also, it can be used as seasoning of pizzas or salads, or accompanying fast foods, cold cuts, sausages and pickles.
Grated or ground: as an ingredient or seasoning of hot meals, such as pastas, stews, soups and sauces.
