Type of cheese and maturation
It is a hard-processed cheese, cylindrical shape or block (cube shape). The rind has a hard consistency, its aspect is smooth being able to be coated with wax or wrapped in cloth. The blocks without rind can be wrapped in a flexible pellicle, hermetically closed.
Normally it is consumed limp with an age of three month or it is left to mature up to twelve months or more.
The smell it´s the typical of the variety and it is characteristic of ripening regulated by lactic acid-producing bacteria; it can vary the intensity from soft to strong.
Forms of consumption
The Cheddar is maybe the best known in the whole world, especially in fast food restaurants or stands, since it is the most used cheese to accompany the buns along with the hamburgers, Mexican nachos with cheese, enchiladas…etc. Thanks to its mild flavour and well molten, it is the preferred one to be included in snacks, added in vegetables creams, onion soups or cheeses tables.
It also accompanies very well with pieces of fruits, like apples, and if we added it to salads together with nuts, it´ll make a very complete dish.
